# Ingredients:

01 - 12 wooden or bamboo skewers, soaked in water for 1 hour

→ Teriyaki Beef Marinade

02 - 2 tablespoons white sesame seeds, toasted
03 - 2 pounds boneless beef sirloin roast, sliced 1 cm thick against the grain
04 - ½ cup dark brown sugar
05 - ⅓ cup soy sauce (if using less-sodium, add 1/2 teaspoon sea salt)
06 - 2 tablespoons garlic (6 cloves), pressed
07 - 1 tablespoon sesame oil
08 - 2 tablespoons mirin or 1 teaspoon white sugar
09 - 2 tablespoons hoisin sauce
10 - ½ cup pineapple juice or fresh crushed pineapples (optional for tenderizing lean cuts)

# Instructions:

01 - Soak wooden skewers in water for 1 hour before grilling to prevent burning.
02 - Toast white sesame seeds on medium-high heat for 2 to 3 minutes until golden. Grind seeds with a pestle or use a sealed bag and rolling pin. Set aside to cool.
03 - Trim and slice the boneless beef sirloin roast against the grain into even 2 x 3-inch slices with 1 cm thickness. Place sliced beef in a large mixing bowl.
04 - In a medium bowl, whisk together brown sugar, soy sauce, garlic, sesame oil, mirin, hoisin sauce, toasted sesame seeds, and pineapple juice if tenderizing tougher cuts. Combine marinade with the sliced beef, mix thoroughly, cover, and refrigerate for 1 hour.
05 - Thread approximately 6 beef slices onto each skewer, leaving a 2-inch gap at one end for easy handling. Arrange skewers on a foil-lined tray.
06 - Boil the remaining marinade in a saucepan until thickened for use as additional sauce while grilling.
07 - Grill skewers over medium-high heat (approximately 400°F) for 3 to 4 minutes on each side until cooked, with a sticky or slightly charred surface. Serve immediately as appetizers or a main dish.

# Notes:

01 - For ultimate tenderness, use cuts such as top sirloin tip roast, tri-tip, or flank steak. Beef tenderloin offers optimal tenderness but may be more expensive.
02 - For lean or tough cuts, marinate with acidic fruits like pineapple only for a maximum of 15 minutes to avoid disintegration.
03 - Always slice beef against the grain to reduce chewiness and improve texture.
04 - Using freshly toasted sesame seeds greatly enhances aroma and flavor, but pre-toasted seeds work fine as a time-saving option.
