Preheat oven to 400°F. Line a baking sheet with parchment paper or a silicone mat.

In a small bowl, whisk together the egg and water. Set aside.

In a food processor or stand mixer, combine almond paste, sugar, and vanilla extract until well mixed.

Unfold the puff pastry sheet on the prepared baking sheet. Use a rolling pin to gently roll it slightly thinner and larger than its original size.

Cut slits 1 inch apart along the edges of the puff pastry, leaving the center intact. Place the almond paste mixture down the center. Fold the strips over the filling on a diagonal, alternating sides.

Brush the pastry lightly with the prepared egg wash. Sprinkle the sliced almonds over the top.

Bake for 10 minutes at 400°F, then reduce the heat to 375°F and bake for an additional 17–20 minutes, or until golden brown.
