Place whole almonds in the bowl of a food processor and pulse until finely chopped.

Add Medjool dates to the chopped almonds in the processor and continue processing, scraping down the bowl as necessary, until the mixture is evenly combined and holds together.

Divide the mixture into 16 equal portions and shape each into a compact log.

Place desiccated coconut in a shallow dish. Roll each log in coconut to coat thoroughly.
