Medjool Dates Almond Coconut Rolls (Print Version)

# Ingredients:

→ Base

01 - 400 g Medjool dates, pitted
02 - 100 g whole almonds

→ Coating

03 - 35 g desiccated coconut

# Instructions:

01 - Place whole almonds in the bowl of a food processor and pulse until finely chopped.
02 - Add Medjool dates to the chopped almonds in the processor and continue processing, scraping down the bowl as necessary, until the mixture is evenly combined and holds together.
03 - Divide the mixture into 16 equal portions and shape each into a compact log.
04 - Place desiccated coconut in a shallow dish. Roll each log in coconut to coat thoroughly.

# Notes:

01 - Moisten the surface of the logs with a little water if the coconut does not adhere.
02 - You can shape the mixture into balls instead of logs for a truffle version.
03 - Replace desiccated coconut with finely chopped nuts if preferred.
04 - Pistachios may be substituted for almonds for a different flavour profile.
