Hawaiian Chicken Sheet Pan Recipe (Print Version)

# Ingredients:

01 - 4 boneless skinless chicken thighs.
02 - 1 cup fresh pineapple chunks (or canned, drained).
03 - 1 red bell pepper, sliced.
04 - 1 yellow bell pepper, sliced.
05 - 1 small red onion, sliced.
06 - 2 tablespoons soy sauce.
07 - 2 tablespoons honey.
08 - 1 tablespoon olive oil.
09 - 1 teaspoon garlic powder.
10 - 1 teaspoon ginger powder.
11 - Salt and pepper to taste.
12 - Fresh cilantro for garnish.
13 - Cooked rice or quinoa for serving.

# Instructions:

01 - Heat oven to 400°F. Mix marinade ingredients in bowl.
02 - Coat chicken in marinade for 15 minutes to 2 hours.
03 - Place vegetables and pineapple around edges of sheet pan. Season with oil, salt and pepper.
04 - Place marinated chicken in center, pour remaining marinade over all.
05 - Cook 25-30 minutes until chicken reaches 165°F and vegetables are tender.
06 - Let rest few minutes. Garnish with cilantro and serve over rice.
