Fruity Pebbles Breakfast Bread (Print Version)

# Ingredients:

01 - 250 g granulated sugar
02 - 240 g plain Greek yogurt
03 - 120 ml vegetable oil or unsweetened applesauce
04 - 3 large eggs
05 - 0.5 teaspoon vanilla extract
06 - 0.5 teaspoon fine salt
07 - 2 teaspoons baking powder
08 - 190 g all-purpose flour
09 - 80 g Fruity Pebbles or similar sweetened fruit-flavored cereal, plus extra for topping

# Instructions:

01 - Preheat oven to 175°C. Thoroughly grease a standard loaf pan with non-stick spray.
02 - In a large mixing bowl, whisk together the sugar, yogurt, oil or applesauce, eggs, and vanilla extract until the mixture is smooth and homogenous.
03 - Add salt, baking powder, and flour to the bowl. Mix until just combined and smooth, avoiding overmixing.
04 - Gently fold in 80 g of Fruity Pebbles, ensuring even distribution while retaining the cereal's texture.
05 - Transfer the batter into the prepared loaf pan. Sprinkle an extra handful of Fruity Pebbles over the surface.
06 - Bake for 45–55 minutes or until a toothpick inserted into the centre emerges clean.
07 - Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve as desired.

01 - Substitute applesauce for oil to reduce fat content while maintaining moisture.
