Panera Squash Soup (Print Version)

# Ingredients:

01 - 1 lb butternut squash.
02 - 2-3 carrots.
03 - 2-3 celery stalks.
04 - 1/2 sweet onion.
05 - 1 tsp olive oil.
06 - 15 oz pumpkin puree.
07 - 1 cup applesauce.
08 - 1 tbsp maple syrup.
09 - 2 oz cream cheese.
10 - 1/2 tsp curry powder.
11 - Pinch nutmeg.
12 - 1/8 tsp cinnamon.
13 - 1/8 tsp ginger.
14 - Seasonings (salt, garlic, onion).
15 - 2 cups vegetable broth.

# Instructions:

01 - Peel and chop squash, carrots and celery into 1-inch pieces.
02 - Roast vegetables at 375°F for 20 minutes, add onions and roast 20-30 minutes more.
03 - Combine roasted vegetables with remaining ingredients in blender until smooth.
04 - Warm soup in saucepan. Optionally top with pumpkin seeds.
