# Ingredients:

1/4 cup olive oil.

3 tbsp red wine vinegar.

1 garlic clove, minced.

1/2 tsp dried oregano.

1/4 tsp Dijon mustard.

1/4 tsp sea salt.

Black pepper.

1 English cucumber.

1 green bell pepper.

2 cups cherry tomatoes.

5 oz feta cheese.

1/3 cup red onion.
13 -
1/3 cup Kalamata olives.

1/3 cup fresh mint.
# Instructions:

Whisk oil, vinegar, garlic, oregano, mustard, salt and pepper.

Arrange cucumber, pepper, tomatoes, feta, onions and olives on platter.

Drizzle with dressing, sprinkle with oregano and mint leaves.

Use feta in brine.
