Carrot Ginger Soup (Print Version)

# Ingredients:

01 - 1 tbsp canola oil.
02 - 1 medium onion, diced.
03 - 2 garlic cloves, minced.
04 - 3 tsp fresh ginger.
05 - 4 cups carrots, chopped.
06 - 1 can coconut milk (400ml).
07 - 4 cups vegetable broth.
08 - 3 tbsp Thai red curry paste.
09 - 1/2 cup cashews.
10 - 1/3 cup maple syrup.
11 - Salt and pepper.
12 - 1 tsp cilantro (optional).

# Instructions:

01 - Using Instant Pot saute function, cook onion in oil until soft. Add garlic, ginger, then carrots.
02 - Add remaining ingredients. Cook on high pressure 30 minutes.
03 - Quick release pressure. Transfer to blender and blend until smooth.
04 - Season with salt and pepper. Garnish with cilantro if desired.

02 - Can adjust spice level.
