Cannoli Cookies (Print Version)

# Ingredients:

01 - 3/4 cup salted butter.
02 - 1/4 cup sugar.
03 - 1 cup brown sugar.
04 - 2 eggs.
05 - 1 tsp vanilla.
06 - 2 1/4 cups flour.
07 - 1 tsp baking soda.
08 - 1/2 tsp salt.
09 - 1 cup mini chocolate chips.
10 - 1 cup whole milk ricotta.
11 - 1 cup powdered sugar.
12 - 1/4 cup mini chips for filling.
13 - 1/8 tsp cinnamon.

# Instructions:

01 - Strain ricotta through cheesecloth. Mix with powdered sugar, cinnamon and chips.
02 - Beat butter with sugars, add eggs and vanilla. Mix in dry ingredients and chips.
03 - Form balls, press centers to make wells. Fill with ricotta mixture.
04 - Chill 30 minutes. Bake at 350°F for 14 minutes. Cool and dust with sugar.

# Notes:

01 - Must strain ricotta well.
02 - Best eaten fresh.
03 - Can be frozen.
