Apple Cider Donut Bread (Print Version)

# Ingredients:

→ For the bread

01 - 2 cups apple cider
02 - ½ cup butter, room temperature
03 - 1 cup brown sugar
04 - 1 large egg
05 - 1 teaspoon vanilla
06 - 2 cups flour
07 - 1 tablespoon apple pie spice
08 - 1 teaspoon baking powder
09 - ½ teaspoon baking soda
10 - ½ teaspoon salt

→ For the topping

11 - ¼ cup melted butter
12 - ½ cup sugar
13 - 1 tablespoon cinnamon

# Instructions:

01 - Add the apple cider to a saucepan over medium heat and bring to a boil. Reduce to a simmer and cook until reduced by half, about 20-30 minutes. Remove from the heat and set aside to cool.
02 - Preheat oven to 350°F (175°C). Butter or grease a 9x5-inch loaf pan.
03 - Add the butter and brown sugar to a mixing bowl and beat with an electric mixer until light and fluffy. Beat in the egg and vanilla until combined.
04 - Add all of the dry ingredients to the mixture along with the reduced apple cider. Stir by hand until just combined.
05 - Pour batter into the prepared loaf pan and bake for 50 minutes or until a tester comes out clean.
06 - Let the bread cool in the pan for 15 minutes. Then remove the bread to a cooling rack set over a sheet pan.
07 - Brush the top and sides of the bread with melted butter. Combine the sugar and cinnamon in a small bowl and sprinkle liberally over the top and sides of the bread to coat, letting excess fall to the pan below.
08 - Let the bread cool for 1 hour before slicing and serving.

# Notes:

01 - Reducing the apple cider concentrates its flavor. Don't skip this step for maximum apple flavor.
02 - Using melted butter and a generous cinnamon sugar coating gives the bread a crackly texture similar to a donut.
03 - You can use apple juice as a substitute for apple cider, though it may result in a sweeter bread.
