Trim the rind off the Brie wheels and cut into cubes. Allow the cubed Brie to come to room temperature.

Place the Brie cubes into the base of a food processor. Pulse until the mixture is smooth and creamy, approximately 5 minutes, scraping down the sides as needed. Transfer the whipped Brie to a serving dish.

Top the whipped Brie with honeycomb, if using, and drizzle with honey. Garnish with fresh rosemary sprigs and serve with crackers or crostini on the side. Alternatively, substitute honey with blueberry jam and garnish with fresh thyme for a different flavor profile.
