Upside Down Apple & Brie Puff Pastry Tarts (Print Version)

01 - 1/4 cup fig jam
02 - 1 1/2 tablespoons extra-hot hot honey
03 - 1/2 teaspoon fresh rosemary, chopped, plus more for garnish
04 - 1 medium Gala apple, unpeeled and sliced 1/8-inch thick
05 - 3 ounces Brie, sliced into 12 (1/8-inch thick) slices
06 - 1 frozen puff pastry sheet, thawed
07 - 1 large egg, lightly beaten

# Instructions:

01 - Preheat oven to 400°F. Line baking sheet with parchment paper.
02 - Stir together fig jam, hot honey, and rosemary in a small bowl.
03 - Spread 1 teaspoon fig mixture into six 3x2-inch rectangles on parchment, spacing 2 inches apart.
04 - Layer apple slices over fig mixture, top with Brie slices.
05 - Cut puff pastry into six 3¼x4½-inch rectangles, prick with fork. Place over apple-brie layers and seal.
06 - Brush with egg wash. Bake 25 minutes until golden, covering with foil after 16 minutes if needed.
