Traditional Spekulatius Spice Cookies (Print Version)

# Ingredients:

01 - 315g all-purpose flour
02 - 1 tsp baker’s ammonia or baking powder
03 - 2 tsp ground cinnamon
04 - 1/2 tsp ground cardamom
05 - 1/4 tsp ground cloves
06 - Pinch of nutmeg
07 - 225g unsalted butter, cubed
08 - 100g brown sugar
09 - 50g vanilla sugar

# Instructions:

01 - Mix the dry ingredients. Cream the butter and sugars, then combine to form a dough. Chill the dough for at least 2 hours.
02 - Preheat the oven to 175°C (350°F). Roll out the dough, press into molds, or cut with cookie cutters.
03 - Bake for 10-12 minutes. Allow the cookies to cool before serving.

01 - For extra crisp cookies, bake for an additional 1-2 minutes.
