Fresh Burrata Salad (Print Version)

# Ingredients:

01 - 5 oz fresh spring mix.
02 - 1 pint sweet baby tomatoes.
03 - 8 oz creamy burrata.
04 - 1 ripe avocado, diced.
05 - 1/2 cup torn basil leaves.
06 - 1/2 cup sliced green onions.
07 - 6 cups crusty bread cubes.
08 - 1/2 cup olive oil.
09 - 1/4 cup aged balsamic.
10 - 1 tbsp honey.
11 - 1 tsp dijon mustard.
12 - Salt and pepper to taste.

# Instructions:

01 - Heat oven to 350°F. Toss bread with oil, garlic powder and salt. Spread on sheet and bake 8-10 minutes until golden.
02 - Whisk balsamic, oil, honey, mustard, salt and pepper until smooth.
03 - Layer greens in bowl. Top with tomatoes, burrata, herbs and croutons. Season burrata with salt and pepper.
04 - Add avocado and drizzle with dressing just before serving.

# Notes:

01 - Can prep components 1 hour ahead except avocado and dressing.
02 - Use high-quality thick balsamic for best results.
03 - Day-old bread makes excellent croutons.
