Strawberry Cheesecake Stuffed Cookies (Print Version)

# Ingredients:

→ Cookie Dough

01 - ½ cup unsalted butter, softened
02 - ½ cup granulated sugar
03 - ½ cup brown sugar
04 - 1 large egg
05 - 1 teaspoon vanilla extract
06 - 1¾ cups all-purpose flour
07 - ½ teaspoon baking soda
08 - ¼ teaspoon baking powder
09 - ¼ teaspoon salt
10 - ½ cup freeze-dried strawberries, crushed

→ Cheesecake Filling

11 - 4 oz cream cheese, softened
12 - 2 tablespoons granulated sugar
13 - 1 teaspoon vanilla extract
14 - ¼ cup strawberry jam or puree

# Instructions:

01 - Beat cream cheese, sugar, vanilla, and strawberry jam until smooth. Refrigerate.
02 - Beat butter and sugars until fluffy. Add egg and vanilla. Mix in combined dry ingredients, then fold in crushed strawberries.
03 - Refrigerate dough for 30 minutes.
04 - Flatten 1 tablespoon dough, add filling, top with more dough. Seal edges and roll into balls.
05 - Bake at 350°F for 12-15 minutes until golden. Cool on sheet, then wire rack.
