Spinach & Feta Patties (Print Version)

01 - 2 cups fresh spinach, chopped (or frozen spinach, thawed and drained)
02 - 1 cup crumbled feta cheese
03 - 1 small onion, finely chopped
04 - 2 cloves garlic, minced
05 - 1 egg
06 - 1/2 cup breadcrumbs (use gluten-free breadcrumbs if needed)
07 - 1/4 cup grated Parmesan cheese (optional, for extra flavor)
08 - 1/4 tsp dried oregano
09 - Salt and pepper to taste
10 - 1 tbsp olive oil (for greasing)
11 - 1 tbsp olive oil (for brushing the patties)

# Instructions:

01 - Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
02 - In a large mixing bowl, combine the chopped spinach, crumbled feta, chopped onion, garlic, egg, breadcrumbs, Parmesan cheese (if using), oregano, salt, and pepper. Mix until all the ingredients are well combined and the mixture sticks together.
03 - Take small portions of the mixture and shape them into small, round or oval patties, about 2-3 inches in diameter. Place them on the prepared baking sheet.
04 - Brush the tops of the patties with olive oil to help them get golden and crispy while baking.
05 - Bake for 20-25 minutes, or until the patties are golden brown and crispy on the outside. Halfway through the baking, flip the patties to ensure even cooking.
06 - Once baked, remove the patties from the oven and let them cool slightly before serving. Serve warm with a side of tzatziki or your favorite dipping sauce.
