Spinach Artichoke Bean Salad (Print Version)

# Ingredients:

01 - 1 15 oz can garbanzo beans, drained and rinsed
02 - 1 15 oz can cannellini beans, drained and rinsed
03 - 1 cup spinach, chopped
04 - 1 15 oz can artichokes, drained and chopped
05 - 1/3 cup chopped green onion
06 - 1/2 cup Greek yogurt
07 - 1/4 cup mayonnaise
08 - 1/2 cup grated parmesan cheese
09 - 1 clove garlic, minced
10 - 1 tsp Italian seasoning
11 - 1/2 tsp lemon zest
12 - 1/2 tsp salt

# Instructions:

01 - Combine garbanzo beans, cannellini beans, spinach, artichokes, and green onions in a large bowl.
02 - In a small bowl, combine Greek yogurt, mayonnaise, parmesan cheese, garlic, Italian seasoning, lemon zest, and salt. Add about 1 tablespoon of water and whisk until smooth.
03 - Pour the dressing over the spinach, artichoke, and bean mixture. Toss thoroughly to combine.
04 - Refrigerate salad in an airtight container for up to 1 week.
