Combine 1 cup of water and 1 cup of sugar in a small saucepan. If using fresh or dried lavender, add it to the saucepan as well. Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar is completely dissolved. Remove from heat and let cool to room temperature.

Once the simple syrup has cooled, strain it through a fine mesh strainer to remove the lavender if you used dried or fresh. If you're using lavender extract instead, you'll add it in the next step.

In a 1-quart pitcher, combine the lemon juice and lavender simple syrup. If you're using lavender extract instead of fresh or dried lavender, add 2 drops to the mixture now. Add the purple food coloring if desired for a lavender hue.

Just before serving, add the cold sparkling water to the pitcher and gently stir to combine. Adding the sparkling water at the last minute helps maintain the carbonation and fizz.

Pour the sparkling lavender lemonade over glasses filled with ice. Garnish with lemon slices and serve immediately for the best flavor and effervescence.
