Heat olive oil in a large skillet over medium-high heat. Add the ground beef and diced onion. Break up the beef with a wooden spoon, season with 3 teaspoons chili powder, 1 teaspoon cumin, salt, and pepper. Cook until beef is nearly cooked through.

Stir in grated garlic and cook for 1 minute. Transfer beef mixture to a plate. Wipe out the skillet.

Add diced sweet potatoes, fire-roasted tomatoes, green chiles, water, remaining 2 teaspoons chili powder, 1 teaspoon cumin, salt, and pepper to skillet. Stir to combine, cover, reduce heat to low, and simmer for 20 minutes until sweet potatoes are tender.

Return beef mixture to the skillet with the sweet potato and vegetable mixture. Stir well to combine.

Sprinkle shredded cheddar cheese over the mixture. Cover and let stand for 1 minute until cheese melts. Garnish with chopped cilantro before serving.
