Southwest Ground Beef Sweet Potato (Print Version)

01 - 1 tablespoon olive oil
02 - 1/2 cup diced onion
03 - 450 grams lean ground beef
04 - 2 cups peeled and diced sweet potatoes
05 - 410 grams canned fire-roasted diced tomatoes
06 - 113 grams canned diced green chiles
07 - 1/4 cup water

→ Seasonings

08 - 5 teaspoons chili powder, divided
09 - 2 teaspoons ground cumin
10 - Kosher salt and freshly ground black pepper, to taste
11 - 1 teaspoon grated garlic

→ Toppings

12 - 1/2 cup shredded cheddar cheese
13 - Fresh cilantro, chopped, for garnish (optional)

# Instructions:

01 - Heat olive oil in a large skillet over medium-high heat. Add the ground beef and diced onion. Break up the beef with a wooden spoon, season with 3 teaspoons chili powder, 1 teaspoon cumin, salt, and pepper. Cook until beef is nearly cooked through.
02 - Stir in grated garlic and cook for 1 minute. Transfer beef mixture to a plate. Wipe out the skillet.
03 - Add diced sweet potatoes, fire-roasted tomatoes, green chiles, water, remaining 2 teaspoons chili powder, 1 teaspoon cumin, salt, and pepper to skillet. Stir to combine, cover, reduce heat to low, and simmer for 20 minutes until sweet potatoes are tender.
04 - Return beef mixture to the skillet with the sweet potato and vegetable mixture. Stir well to combine.
05 - Sprinkle shredded cheddar cheese over the mixture. Cover and let stand for 1 minute until cheese melts. Garnish with chopped cilantro before serving.

01 - For even cooking, ensure sweet potato cubes are cut to similar size. Use lean ground beef to reduce excess grease.
