Snickerdoodle Cheesecake (Print Version)

# Ingredients:

01 - 32 oz cream cheese.
02 - 1 1/2 cup sugar.
03 - 1 tbsp cinnamon.
04 - 1 tbsp vanilla.
05 - 3 eggs plus 1 yolk.
06 - 1 cup sour cream.
07 - 2 tbsp cornstarch.
08 - 1/2 cup heavy cream.
09 - 18 cinnamon graham crackers.
10 - 3 tbsp sugar for crust.
11 - 1/2 tsp cinnamon for crust.
12 - 8 tbsp butter, melted.
13 - 2 cups heavy cream for topping.
14 - 1/2 cup sugar for topping.
15 - Snickerdoodle cookies.

# Instructions:

01 - Process graham crackers with sugar and cinnamon. Mix in butter and press into springform pan. Bake at 325°F for 12 minutes.
02 - Beat cream cheese with sugar. Add eggs one at a time, then remaining ingredients until smooth.
03 - Pour into crust. Bake with water bath 1 hour 15 minutes. Cool in oven 30 minutes, then chill 4 hours.
04 - Make cookie crumbs. Whip cream with sugar until stiff peaks, fold in crumbs. Pipe onto cake.

01 - Best chilled overnight.
02 - Use water bath to prevent cracking.
03 - Can make cookies or use store-bought.
