Skillet Banana Fritters (Print Version)

# Ingredients:

→ Batter

01 - 3 ripe bananas, mashed
02 - 1 cup all-purpose flour
03 - 2 tablespoons granulated sugar
04 - 1 teaspoon baking powder
05 - 1/2 teaspoon ground cinnamon
06 - 1/4 teaspoon salt
07 - 1/2 cup milk
08 - 1 teaspoon vanilla extract

→ For Cooking & Serving

09 - Vegetable or canola oil for frying
10 - Powdered sugar for dusting (optional)

# Instructions:

01 - Mash bananas until smooth in a bowl.
02 - Whisk together flour, sugar, baking powder, cinnamon, and salt.
03 - Combine dry ingredients with mashed bananas, milk, and vanilla. Mix just until combined.
04 - Let batter rest 5 minutes while heating 1/4 inch oil in skillet over medium heat.
05 - Drop spoonfuls of batter into hot oil, flatten slightly. Fry 2-3 minutes per side until golden.
06 - Drain on paper towels, dust with powdered sugar if desired. Serve warm.
