Shrimp and Spinach Stuffed Pasta Rolls (Print Version)

# Ingredients:

→ Pasta and Filling

01 - 12 lasagna noodles
02 - 1 lb shrimp, peeled and deveined
03 - 2 cups fresh spinach, chopped
04 - 1/2 cup ricotta cheese
05 - 1/2 cup mozzarella cheese, shredded
06 - 1/4 cup Parmesan cheese, grated
07 - 1 egg
08 - 2 cloves garlic, minced
09 - 2 tablespoons olive oil
10 - Salt and pepper to taste

→ Red Pepper Sauce

11 - 1 cup roasted red peppers
12 - 1/2 cup heavy cream
13 - 1 tablespoon fresh basil, chopped
14 - 1 tablespoon lemon juice

# Instructions:

01 - Preheat oven to 375°F. Cook lasagna noodles according to package.
02 - Sauté shrimp and garlic in olive oil until pink, 3-4 minutes.
03 - Mix spinach, cheeses, egg, and cooked shrimp. Season with salt and pepper.
04 - Spread filling on noodles, roll up, place seam-side down in baking dish.
05 - Blend roasted peppers, cream, and lemon juice until smooth. Pour over rolls.
06 - Cover and bake 25 minutes. Uncover, add cheese, bake 10 more minutes until bubbly.

01 - Can substitute chicken for shrimp
02 - Can use half-and-half for lighter version
03 - Can make ahead up to 2 days
