Seafood Lasagna Recipe (Print Version)

# Ingredients:

01 - 4 tablespoons unsalted butter (for sauce).
02 - 4 tablespoons all-purpose flour.
03 - 2 cups milk.
04 - 1 tablespoon unsalted butter (for seafood).
05 - 1 tablespoon onion, finely chopped.
06 - 1 garlic clove, minced.
07 - 3/4 pound flounder fillets, cut into pieces.
08 - 1 pound raw shrimp, peeled.
09 - 1 pound scallops.
10 - 1/2 cup dry white wine.
11 - 2 cups sliced mushrooms.
12 - 1 cup crushed tomatoes.
13 - 3/4 cup heavy cream.
14 - 1/4 teaspoon red pepper flakes.
15 - 3 tablespoons fresh parsley.
16 - 1/4 teaspoon dried oregano.
17 - 1/4 teaspoon dried basil.
18 - 9 lasagna noodles, cooked.
19 - 1 cup swiss cheese, grated.
20 - 1/2 cup parmesan cheese, shredded.

# Instructions:

01 - Make roux with butter and flour. Gradually whisk in milk until thickened.
02 - Sauté onion and garlic, add seafood and wine. Cook until just done then remove.
03 - Cook mushrooms in same pan. Add bechamel, tomatoes, cream, herbs and seasonings.
04 - Layer sauce, seafood, noodles and cheese in buttered 9x13 dish.
05 - Bake at 375°F for 40-50 minutes until bubbly.

# Notes:

01 - Can be assembled ahead.
02 - Don't overcook seafood.
03 - Cover with foil if browning too fast.
