Scandinavian Almond Cake (Print Version)

# Ingredients:

01 - 1/4 cup sliced almonds
02 - 1 1/4 cups all-purpose flour (6 ounces)
03 - 1/2 teaspoon baking powder
04 - 1/4 teaspoon salt
05 - 1 1/4 cups sugar
06 - 1 large egg
07 - 1 1/2 teaspoons almond extract
08 - 2/3 cup half & half cream
09 - 1/2 cup salted butter, melted

# Instructions:

01 - Melt the butter and set aside to cool. Spray a 4.75 x 12.25-inch Rehrucken pan liberally with Baker's Joy. Sprinkle the almonds in the bottom of the pan.
02 - Preheat your oven to 350°F (175°C).
03 - Whisk the flour, baking powder, and salt in a small bowl. Set aside.
04 - In a large bowl, whisk the sugar, egg, almond extract, and half & half cream. Add the dry ingredients and whisk until there are no streaks of flour.
05 - Add the melted butter and whisk until smooth.
06 - Pour the batter into the prepared pan. Bake at 350°F (175°C) for 40-50 minutes, or until the edges are golden brown and the center is set.
07 - Let the cake cool in the pan for 10-15 minutes, then carefully invert it onto a wire rack. Serve warm or at room temperature. If desired, sprinkle with powdered sugar.

# Notes:

01 - You can also bake this cake in a large 9-inch loaf pan. Increase the baking time by about 10 minutes.
