Rosalynn Carter's Cheese Ring Recipe (Print Version)

# Ingredients:

01 - 1 cup chopped pecans.
02 - 1 pound sharp cheddar cheese, shredded.
03 - 1 small onion, grated.
04 - 1 cup mayonnaise.
05 - 1/2 teaspoon cayenne pepper.
06 - Strawberry preserves.

# Instructions:

01 - Toast pecans in skillet until fragrant and lightly browned. Cool and reserve some for garnish.
02 - Combine cheese, onion, mayonnaise, cayenne and cooled pecans until well mixed.
03 - Shape mixture into ring on serving plate. Cover and refrigerate at least 2 hours.
04 - Let stand 30 minutes at room temperature. Add preserves to center and garnish with reserved pecans.

# Notes:

01 - Can be made 3 days ahead.
02 - Add preserves just before serving.
03 - Serve with crackers.
