Roasted Zucchini (Print Version)

# Ingredients:

01 - 1 lb zucchini (3 medium).
02 - 2 tsp olive oil.
03 - 1 tsp Italian seasoning.
04 - 1/2 tsp sea salt.
05 - 1/4 tsp garlic powder.
06 - Black pepper.
07 - Lemon wedges.
08 - Optional cheese for serving.
09 - Optional fresh herbs.

# Instructions:

01 - Heat oven to 425°F. Line baking sheet with parchment. Cut zucchini into 1-inch half moons.
02 - Toss zucchini with oil and seasonings in large bowl.
03 - Spread on baking sheet, roast 15-20 minutes until edges are golden.
04 - Squeeze with lemon and top with optional cheese and herbs.

02 - Can be made vegan without cheese.
