Ricotta Pistachio Honey Bites (Print Version)

# Ingredients:

→ For the dough

01 - 1½ cups (190g) all-purpose flour
02 - ½ cup (60g) almond flour
03 - ½ cup (60g) shelled pistachios, finely ground
04 - ½ cup (120g) unsalted butter, softened
05 - ½ cup (100g) granulated sugar
06 - ½ cup (120g) ricotta cheese
07 - 1 large egg
08 - 1 teaspoon vanilla extract
09 - ½ teaspoon almond extract (optional)
10 - ½ teaspoon baking powder
11 - ¼ teaspoon salt

→ For the topping

12 - ¼ cup (60ml) honey, for drizzling
13 - 2 tablespoons chopped pistachios (optional)

# Instructions:

01 - Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
02 - In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes. This incorporates air into the mixture for a tender texture.
03 - Add the ricotta cheese, egg, vanilla extract, and almond extract (if using) to the butter-sugar mixture. Mix until smooth and well combined. The mixture might look slightly curdled, but that's normal.
04 - Gradually add the all-purpose flour, almond flour, ground pistachios, baking powder, and salt to the wet ingredients. Mix until just combined and a soft dough forms. Be careful not to overmix, which can make the bites tough.
05 - Using a tablespoon or small cookie scoop, portion the dough and roll into balls about 1-inch in diameter. Place them on the prepared baking sheet, leaving about 2 inches of space between each ball as they will spread slightly during baking.
06 - Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden but the centers are still soft. They will firm up as they cool, so be careful not to overbake.
07 - Allow the bites to cool on the baking sheet for about 5 minutes, then while still warm, drizzle each one with honey. If you're using additional chopped pistachios, sprinkle them over the honey-drizzled bites now so they stick to the honey.
08 - Transfer the bites to a wire cooling rack to cool completely. The honey will set slightly as they cool, becoming delightfully sticky.
09 - Once cooled, arrange on a serving plate and enjoy at room temperature. These bites are perfect with tea, coffee, or as a sweet treat any time of day.

01 - For enhanced pistachio flavor, lightly toast the pistachios in a dry pan before grinding them.
02 - Warming the honey slightly before drizzling makes it easier to distribute evenly over the bites.
03 - Full-fat ricotta yields the best texture, but part-skim will work in a pinch.
