# Ingredients:

01 - 3 cups red radishes, trimmed and thinly sliced
02 - 1 small red onion, halved and thinly sliced
03 - 1/2 cup fresh dill, finely chopped

→ Dressing

04 - 1/4 cup fresh lemon juice (from approximately 1 large lemon)
05 - 1 tablespoon red wine vinegar
06 - 1 large garlic clove, finely minced
07 - 2 teaspoons Dijon mustard
08 - 1/2 cup extra virgin olive oil
09 - Salt, to taste
10 - Freshly ground black pepper, to taste

11 - 1/2 cup feta cheese, crumbled

# Instructions:

01 - In a small bowl, combine lemon juice, red wine vinegar, minced garlic, and Dijon mustard. Slowly drizzle in extra virgin olive oil while whisking continuously, until the dressing is fully emulsified. Season with salt and freshly ground black pepper to taste.
02 - In a large bowl, arrange sliced radishes, red onion, and chopped dill.
03 - Pour the prepared vinaigrette over the radish mixture. Stir gently to ensure all ingredients are evenly coated.
04 - Transfer mixture to a serving bowl and fold in crumbled feta cheese. Serve immediately to maintain freshness and texture.

01 - For best texture, use block feta and crumble before serving. To retain crispness, combine vegetables and vinaigrette just before serving. Substitute fresh mint for dill if preferred.
