Quick & Easy Potsticker Soup (Print Version)

# Ingredients:

→ Soup Base

01 - 4 cups chicken broth (or vegetable broth for vegetarian option)
02 - 1 tablespoon soy sauce
03 - 1 tablespoon sesame oil
04 - 2 teaspoons grated fresh ginger
05 - 2 cloves garlic, minced
06 - 1 tablespoon rice vinegar (optional)

→ Main Components

07 - 12-15 frozen potstickers (store-bought or homemade)
08 - ½ cup sliced mushrooms (optional)
09 - ½ cup spinach or bok choy, roughly chopped (optional)

→ Seasonings and Garnish

10 - Salt and pepper, to taste
11 - 1 teaspoon chili oil or red pepper flakes (optional, for heat)
12 - 2-3 green onions, thinly sliced (for garnish)
13 - Extra sesame oil for drizzling (optional)

# Instructions:

01 - Heat the sesame oil in a large pot over medium heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant, being careful not to burn them.
02 - Pour in the chicken or vegetable broth, soy sauce, and rice vinegar (if using). Bring the mixture to a gentle simmer and let it cook for 5-10 minutes to allow the flavors to meld together.
03 - Carefully add the frozen potstickers directly to the simmering broth. No need to thaw them first. Cover the pot and cook for about 5-7 minutes, or according to package directions, until the potstickers are heated through and tender.
04 - If using mushrooms, add them when the potstickers are about halfway done. Add the spinach or bok choy during the last minute of cooking so they just wilt but maintain their color and some texture.
05 - Taste the broth and adjust seasonings with salt and pepper as needed. If you'd like some heat, add the chili oil or red pepper flakes. Remove the pot from heat once everything is cooked to your liking.
06 - Ladle the hot soup into bowls, making sure each serving gets a good number of potstickers and vegetables. Garnish with sliced green onions and a light drizzle of sesame oil if desired. Serve immediately while hot.

# Notes:

01 - For a heartier meal, add cooked rice noodles, ramen, or udon to the soup.
02 - Feel free to add other vegetables like carrots, corn, or snow peas for extra nutrition and color.
03 - For a vegan version, use vegetable broth and check that your potstickers are vegan-friendly.
