In a small bowl, combine gelatin powder with cold water and stir until fully dissolved. Allow the mixture to sit and bloom.

In a saucepan over medium heat, combine the remaining water and sugar. Stir continuously for about 5 minutes until sugar dissolves. Monitor the mixture with a candy thermometer, ensuring it reaches 110°C (soft-ball stage).

Add the bloomed gelatin mixture into the hot sugar syrup. Stir thoroughly to integrate. Remove the pan from the heat.

Divide the mixture into separate containers as desired. Add chosen extracts and food colorings to each portion, mixing well for an even appearance.

Pour the colored mixtures into greased molds or pans. Allow to cool completely at room temperature for a minimum of 4 hours or until fully set.

Once firm, remove the gumdrops from molds. Use a sharp knife to cut into desired shapes or sizes. Toss the pieces in additional granulated sugar to coat evenly before serving.
