# Ingredients:

01 - 800 g granulated sugar
02 - 60 g gelatin powder
03 - 355 ml water, divided
04 - 240 ml cold water
05 - Lemon extract or vanilla extract, to taste

06 - Food coloring, assorted

→ Coating

07 - Additional granulated sugar, for coating

# Instructions:

01 - In a small bowl, combine gelatin powder with cold water and stir until fully dissolved. Allow the mixture to sit and bloom.
02 - In a saucepan over medium heat, combine the remaining water and sugar. Stir continuously for about 5 minutes until sugar dissolves. Monitor the mixture with a candy thermometer, ensuring it reaches 110°C (soft-ball stage).
03 - Add the bloomed gelatin mixture into the hot sugar syrup. Stir thoroughly to integrate. Remove the pan from the heat.
04 - Divide the mixture into separate containers as desired. Add chosen extracts and food colorings to each portion, mixing well for an even appearance.
05 - Pour the colored mixtures into greased molds or pans. Allow to cool completely at room temperature for a minimum of 4 hours or until fully set.
06 - Once firm, remove the gumdrops from molds. Use a sharp knife to cut into desired shapes or sizes. Toss the pieces in additional granulated sugar to coat evenly before serving.

01 - Accurately monitor syrup temperature with a candy thermometer to prevent crystallization and achieve proper texture.
02 - Cool the finished mix thoroughly before cutting to ensure clean shapes and prevent stickiness.
03 - A few drops of lemon juice or white vinegar in the syrup help inhibit crystallization.
04 - Experiment with a variety of extracts and food colors to create unique flavor and color combinations.
05 - Alternative pan sizes can be used; thickness of gumdrops will vary according to the mold selected.
