Pink Radish Summery Tzatziki (Print Version)

# Ingredients:

→ Base

01 - 250 g Greek yogurt, plain and unsweetened

→ Vegetables

02 - 1 cucumber, grated
03 - 2 watermelon radishes, grated

→ Aromatics

04 - 2 garlic cloves, grated
05 - Handful fresh dill, finely chopped

→ Seasonings & Garnish

06 - Juice of 1/2 lemon
07 - Pinch of salt, for straining and finishing
08 - Drizzle of extra virgin olive oil

# Instructions:

01 - Place the Greek yogurt over a fine mesh strainer set atop a bowl. Sprinkle lightly with salt and allow liquid to drain while preparing the vegetables.
02 - Grate the cucumber and watermelon radishes. In a separate strainer, toss with a pinch of salt and allow excess moisture to drain. Squeeze gently as needed to remove additional water.
03 - After approximately 20 minutes, combine strained yogurt, cucumber, and radish in a mixing bowl. Add grated garlic, lemon juice, and dill. Mix thoroughly until all ingredients are evenly incorporated. Taste and adjust seasoning if required.
04 - Spread the mixture onto a serving plate. Finish with a drizzle of olive oil and a sprinkle of flakey salt to enhance flavor and presentation.

01 - To achieve a thicker, creamier texture, ensure both yogurt and vegetables are well strained before mixing.
