Heat oven to 350°F. Line muffin tin with paper liners.

Mix graham crumbs and butter. Press into muffin cups.

Beat cream cheese and sugar. Add eggs and vanilla.

Fill cups 3/4 full with cream cheese mixture. Top with pineapple.

Bake 20-25 minutes until set. Cool completely then drizzle with caramel.
