Peppermint Bark Cheesecake (Print Version)

# Ingredients:

01 - 36 Oreos (3 cups crumbs).
02 - 6 tbsp butter, melted.
03 - 7 oz white chocolate, chopped.
04 - 24 oz cream cheese (3 packages).
05 - 1 cup sugar.
06 - 1 tbsp cornstarch.
07 - 1 cup sour cream.
08 - 1 tsp vanilla extract.
09 - 1 tsp peppermint extract.
10 - 3 eggs plus 1 yolk.
11 - 3/4 cup chocolate chunks.
12 - 3/4 cup crushed peppermints.
13 - 3 oz white chocolate for mousse.
14 - 2 1/4 cups heavy cream, divided.
15 - Powdered sugar.
16 - Red food coloring.
17 - Toppings: candy canes, chocolate curls.

# Instructions:

01 - Crush Oreos, mix with butter. Press into pan and bake at 325°F for 8-10 minutes.
02 - Beat cream cheese mixture, fold in melted chocolate, eggs, and mix-ins. Pour into crust.
03 - Bake in water bath at 300°F for 75 minutes. Cool slowly in oven.
04 - Make white chocolate ganache, fold into whipped cream mixture. Spread over cheesecake.
05 - Pipe striped whipped cream, add candy canes and chocolate curls.
