Pan-fried gnocchi with spinach (Print Version)

# Ingredients:

01 - 1 pound gnocchi
02 - 5 cups water
03 - 2 teaspoons salt
04 - 1 pound sausage, cut into 1-inch pieces (e.g., smoked turkey link sausage)
05 - 2 tablespoons butter
06 - 2 tablespoons olive oil
07 - 1 ½ cups baby spinach
08 - ¼ cup grated parmesan cheese

→ Seasonings

09 - ½ teaspoon dried basil
10 - ½ teaspoon dried oregano
11 - ½-1 ½ teaspoons crushed red pepper (adjust to taste)
12 - ¼ teaspoon garlic powder
13 - Salt and pepper to taste

# Instructions:

01 - Bring 5 cups of water and 2 teaspoons of salt to a boil. Add gnocchi and boil for 1-2 minutes until they float. Drain and set aside.
02 - Heat butter and olive oil in a skillet over medium heat. Add boiled gnocchi and sausage pieces. Cook until browned on one side, then flip and cook the other side.
03 - Add spinach to the skillet and cook gently until wilted. Sprinkle with basil, oregano, crushed red pepper, and 2 tablespoons of parmesan. Adjust salt and pepper to taste.
04 - Dish up the gnocchi. Sprinkle with remaining parmesan cheese and serve on its own or with a salad and bread.

01 - Avoid over-boiling the gnocchi, as it will also cook during pan-frying.
02 - For a vegetarian option, replace the sausage with vegetarian sausages or additional vegetables like mushrooms, bell peppers, or squash.
03 - This recipe can be used for meal prep, lasting up to 5 days when stored in the refrigerator.
04 - Homemade gnocchi can be frozen on a parchment-lined tray. Thaw and boil before cooking.
