Thai Noodle Stir Fry (Print Version)

# Ingredients:

01 - 200g wide rice noodles.
02 - 2 tsp dark soy sauce.
03 - 1 1/2 tbsp oyster sauce.
04 - 1 tbsp light soy sauce.
05 - 2 tsp white vinegar.
06 - 2 tsp sugar.
07 - 3 tbsp oil.
08 - 2 cloves garlic.
09 - 150g chicken thighs, sliced.
10 - 1 large egg.
11 - 4 stems Chinese broccoli.

# Instructions:

01 - Cut broccoli into pieces. Cook noodles. Mix sauce ingredients.
02 - Stir fry garlic and chicken. Add broccoli stems then leaves. Scramble egg. Remove all from wok.
03 - Heat wok until smoking. Add noodles and sauce, toss minimally to caramelize edges.
04 - Add chicken mixture back in, quickly toss together and serve immediately.

# Notes:

01 - Cook chicken separately for best results.
02 - Wok must be very hot for noodles.
03 - Can use different proteins.
