Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Lay out one sheet of phyllo dough on a clean surface and brush lightly with melted butter. Place another sheet on top and brush again, repeating until you have 4 layers.

Cut the layered phyllo into strips about 3 inches wide. Place a piece of feta at the end of each strip.

Roll the feta up in the phyllo, folding the edges to seal and create a small package. Place the rolls seam-side down on the prepared baking sheet.

Brush the outside of each roll with more melted butter, then bake in the preheated oven for 20-25 minutes, or until golden and crispy.

While the rolls are baking, warm the honey gently in a saucepan over low heat. Stir in the chili flakes and apple cider vinegar.

Once the rolls are done, drizzle them generously with the chili honey and garnish with chopped parsley, if using. Serve warm and enjoy!
