Mini Sugar Cookies (Print Version)

# Ingredients:

01 - 1/2 cup butter (113g), soft.
02 - 1/2 cup sugar (115g).
03 - 1/2 cup powdered sugar (60g).
04 - 1/2 cup oil (108g).
05 - 1 1/4 tsp vanilla extract.
06 - 1/4 tsp almond extract.
07 - 1 large egg.
08 - 2 1/3 cups flour (291g).
09 - 3/4 tsp baking soda.
10 - 3/4 tsp cream of tartar.
11 - 1/2 tsp salt.
12 - 3/4 cup sugar for rolling (173g).

# Instructions:

01 - Heat oven to 350°F. Line baking sheets with parchment.
02 - Beat butter and sugars, add oil, egg and extracts until combined.
03 - Combine flour, baking soda, cream of tartar and salt. Add to wet ingredients.
04 - Scoop 2-tsp portions, roll in sugar. Flatten with glass.
05 - Cook 9-12 minutes until set around edges. Sprinkle with sugar while hot.

# Notes:

01 - Dough is soft due to oil content.
02 - Cool pans between batches.
03 - Makes about 90 mini cookies.
