Marry Me Chickpeas Creamy Dish (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil
02 - 2 garlic cloves, crushed
03 - 1/2 tablespoon Italian seasoning
04 - 1/2 teaspoon red chili flakes
05 - 1/4 teaspoon ground black pepper
06 - 2 tablespoons tomato paste
07 - 1/2 cup (30 g) sun-dried tomatoes, sliced
08 - 1 teaspoon fresh thyme
09 - 2 cans (400 g each) chickpeas, drained and rinsed
10 - 1 cup (200 ml) vegetable stock
11 - 1 cup (200 ml) coconut milk
12 - 6-8 fresh basil leaves, roughly shredded
13 - Salt and freshly ground black pepper, to taste

# Instructions:

01 - In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn it.
02 - Stir in the Italian seasoning, red chili flakes, and a pinch of ground black pepper. Cook for another minute.
03 - Add the tomato paste to the skillet, stirring to combine it well with the spices and garlic.
04 - Stir in the sun-dried tomatoes, fresh thyme, chickpeas, and vegetable stock. Bring to a simmer, then cover with a lid and simmer for 5 minutes.
05 - Stir in the coconut milk, simmer for another minute, then add the fresh basil leaves.
06 - Season to taste with salt and freshly ground black pepper and serve immediately.
