# Ingredients:

01 - Unsalted butter, 1/2 cup (1 stick), melted
02 - All-purpose flour, 1 cup

# Instructions:

01 - Preheat oven to 350°F (175°C). Place the stick of butter in a 9×9-inch baking dish. Let the butter melt in the oven as it preheats, about 3-4 minutes.
02 - In a bowl, whisk together dry ingredients: flour, baking powder, salt, and sugar. Add buttermilk, vanilla extract, and lemon extract (if using). Mix until smooth and pourable.
03 - Evenly pour batter over the melted butter in the baking dish. Do not stir to keep the layers distinct.
04 - Spoon the lemon pie filling or lemon curd evenly over the batter. It will sink during baking, forming a custard-like layer.
05 - Bake for 45-55 minutes or until edges are golden brown and a toothpick inserted in center comes out clean or with moist crumbs.
06 - Let the cobbler cool for 10-15 minutes to allow the filling to firm up slightly before serving.
07 - Cut into squares and serve warm. Optionally garnish with whipped cream, ice cream, powdered sugar, or fresh lemon slices.
