# Ingredients:

07 - ⅓ cup crushed gluten-free graham crackers (such as Simple Mills Honey Cinnamon Sweet Thins)
08 - ¼ cup toasted unsweetened coconut

# Instructions:

01 - In a medium mixing bowl, combine the Greek yogurt, key lime juice, vanilla protein powder, lime zest, powdered Swerve (or sweetener of choice), and vanilla extract. Mix until smooth and well combined, making sure there are no clumps of protein powder.
02 - Line a baking sheet with parchment paper or a silicone baking mat. Pour the yogurt mixture onto the prepared baking sheet and use a spatula to spread it into a thin, even layer, about ¼-inch thick.
03 - Sprinkle the crushed graham crackers and toasted coconut evenly over the yogurt layer. You can add a little extra lime zest on top for more color and flavor if desired. Gently press the toppings into the yogurt so they stick as it freezes.
04 - Place the baking sheet in the freezer, making sure it's sitting flat. Freeze for at least 2-3 hours, or until the yogurt is completely solid and set.
05 - Once frozen, remove the baking sheet from the freezer. Carefully lift the parchment paper or silicone mat off the baking sheet. Break or cut the frozen yogurt bark into pieces of your desired size.
