Lightly spray an 8x8 baking pan with nonstick cooking spray. Use your fingers to spread the spray evenly across the bottom and sides of the pan. Be careful not to overspray, as this can make your jello roll ups greasy.

In a medium microwave-safe mixing bowl, combine the boiling water and the packet of flavored Jello gelatin. Whisk until the gelatin is completely dissolved and no granules remain.

Add the mini marshmallows to the bowl with the dissolved gelatin. Stir to coat all the marshmallows in the liquid.

Place the bowl in the microwave and heat on high for 30 seconds. Remove and whisk vigorously until all the marshmallows have completely melted and dissolved into the gelatin mixture. The mixture should look light and frothy.

Pour the frothy gelatin-marshmallow mixture into your prepared 8x8 pan, spreading it evenly to the edges. Place the pan in the refrigerator for at least 1 hour, or until the gelatin has firmly set.

Once set, run a butter knife around the edges of the pan to loosen the jello sheet. Carefully lift one corner and gently pull to release the entire sheet from the pan. Place it onto a piece of parchment paper that's slightly larger than the jello sheet, with the fluffy marshmallow side facing up.

Starting at one edge of the jello square, carefully roll the sheet into a tight spiral, creating a log shape. Position the log with the seam side down so it stays closed.

Using a sharp knife, cut the log into approximately 12 half-inch slices. A clean, sharp knife will give you the neatest cuts. Transfer the colorful pinwheels to a serving plate and enjoy!
