Preheat oven to 175°C. Toast almonds or mixed nuts for 8-10 minutes.

Heat honey in a saucepan until it reaches 120°C.

Combine sugar and water in a saucepan. Heat to 150°C.

Beat egg whites to soft peaks, then slowly add the hot honey.

Add the sugar syrup, then fold in toasted nuts and vanilla extract or zest.

Pour into a parchment paper lined dish, and press evenly. Let set for 4 hours.
