Italian Sausage Orzo Soup Recipe (Print Version)

# Ingredients:

01 - 16 ounces Italian sausage.
02 - 1/2 medium onion, finely chopped.
03 - 2 celery stalks, finely chopped.
04 - 2 tablespoons flour.
05 - 4 garlic cloves, minced.
06 - 4 cups chicken broth.
07 - 1 can (28 ounces) diced tomatoes with juices.
08 - 1/2 teaspoon dried oregano.
09 - 1 cup uncooked orzo.
10 - 1 cup heavy cream.
11 - 2 cups fresh baby spinach (optional).
12 - Salt and pepper to taste.

# Instructions:

01 - Brown sausage over medium-high heat 7-10 minutes. Remove to paper towel-lined plate.
02 - In same pot with 1 tablespoon fat, cook onion and celery 4-5 minutes.
03 - Add flour and garlic, cook 1 minute. Slowly stir in broth until flour dissolves.
04 - Return sausage to pot with tomatoes and oregano. Bring to gentle boil.
05 - Add cream and orzo. Simmer 12 minutes until orzo is tender, stirring often.
06 - Stir in spinach if using. Season with salt and pepper.

01 - Cook orzo separately for leftovers.
02 - Must use heavy cream.
03 - Stir often to prevent sticking.
