Italian Grinder Chicken Salad (Print Version)

# Ingredients:

→ Salad Ingredients

01 - 2 cups rotisserie chicken, shredded
02 - 1/4 lb. salami or soppressata, diced
03 - 1/4 lb. pepperoni, diced
04 - 1/4 cup provolone, thick-sliced, diced
05 - 1/4 cup crumbled feta
06 - 2/3 cup diced grape tomatoes
07 - 1/3 cup banana peppers, mild
08 - 1/2 red onion, sliced thin or diced

→ Dressing

09 - 1/2 cup mayonnaise
10 - 1/4 cup grated parmesan
11 - 3 tablespoons red wine vinegar
12 - 1-2 tablespoons banana pepper juice from the jar, to taste
13 - 1 tsp oregano
14 - 1 tsp garlic powder
15 - Freshly cracked pepper
16 - Salt to taste, about 1/4 tsp

# Instructions:

01 - Combine all the dressing ingredients in a bowl or liquid measuring cup. Taste and adjust if needed.
02 - In a large bowl combine all of the toppings: rotisserie chicken, diced deli meats, red onion, tomatoes, banana peppers, and cheeses.
03 - Pour most the dressing over the bowl of toppings, toss well to coat, adding the remaining dressing if needed.
04 - Store it in an airtight container in the fridge for up to 4 days. Serve with veggies, crackers or tortilla chips or on a sandwich.

# Notes:

01 - Dressing may need additional red wine vinegar for the right tangy kick
02 - Can customize with your favorite Italian deli meats
03 - Save extra dressing to add later if the salad dries out in the fridge
