Honey Walnut Shrimp (Print Version)

# Ingredients:

01 - 1 lb jumbo shrimp, peeled.
02 - 4 egg whites.
03 - 1/4 tsp salt.
04 - 1/4 tsp black pepper.
05 - 2/3 cup cornstarch.
06 - 1 cup vegetable oil.
07 - 1/4 cup Japanese mayo.
08 - 3 tbsp condensed milk.
09 - 2 tbsp honey.
10 - 1 tbsp lemon juice.
11 - 1/2 cup walnut halves.
12 - 3 tbsp sugar.
13 - 1 tbsp cold water.
14 - Green onion for garnish.

# Instructions:

01 - Mix mayo, condensed milk, honey and lemon juice in a bowl.
02 - Cook sugar and water until syrupy. Add walnuts, coat quickly and separate on parchment.
03 - Season shrimp. Whisk egg whites until foamy, mix with cornstarch. Coat shrimp.
04 - Heat oil to 350-375°F. Fry shrimp in batches 2-3 minutes until golden.
05 - Toss crispy shrimp with sauce and candied walnuts. Top with green onions.

# Notes:

01 - Can use regular mayo instead of Japanese.
02 - Fry in small batches.
03 - Work quickly with candied walnuts.
