Fresh Strawberry Shortcake (Print Version)

# Ingredients:

01 - 7 cups fresh strawberries, quartered.
02 - 1/4 cup + 2 tbsp sugar, divided.
03 - 1 tsp vanilla extract.
04 - 1 cup heavy cream.
05 - 2 3/4 cups flour (345g).
06 - 1/4 cup sugar (50g).
07 - 4 tsp baking powder.
08 - 1/2 tsp baking soda.
09 - 1 tsp sea salt.
10 - 3/4 cup cold butter, cubed (170g).
11 - 1 cup cold buttermilk.
12 - 2 tbsp cream for brushing.
13 - Coarse sugar for topping.

# Instructions:

01 - Mix strawberries with 1/4 cup sugar, cover and chill to release juices.
02 - Combine flour, sugar, baking powder, baking soda and salt.
03 - Work cold butter into dry mix until crumbly using pastry cutter.
04 - Stir in buttermilk just until mixed. Fold and flatten dough three times on floured surface.
05 - Cut into 3-inch rounds, place touching in skillet or pan.
06 - Brush with cream, sprinkle sugar, bake at 400°F for 18-22 minutes until golden.
07 - Beat heavy cream with remaining sugar and vanilla until soft peaks form.
08 - Split warm biscuits, layer with berries and whipped cream.

# Notes:

01 - Keep ingredients cold for flakiest biscuits.
02 - Don't twist cutter when making biscuits.
03 - Components can be made 1 day ahead.
