01 - 125 grams all-purpose flour
02 - 50 grams granulated sugar
03 - 1 teaspoon ground cinnamon
04 - 1/4 teaspoon salt
05 - 1/4 teaspoon baking powder
06 - 60 millilitres milk
07 - 28 grams unsalted butter, melted
08 - 1 teaspoon vanilla extract

→ Topping

09 - 25 grams granulated sugar
10 - 1 teaspoon ground cinnamon
11 - 14 grams unsalted butter, melted

# Instructions:

01 - Whisk flour, 50 grams sugar, 1 teaspoon cinnamon, salt, and baking powder in a large mixing bowl until homogenous.
02 - Add milk, 28 grams melted butter, and vanilla extract to the dry mixture. Stir with a spatula until a cohesive dough forms.
03 - Preheat oven to 175°C. Place dough between two sheets of parchment paper and roll out to a thickness of 3 millimetres.
04 - Remove the top parchment sheet. Using a sharp knife or pizza cutter, slice dough into 1.25 centimetre squares. Slide parchment with cut dough onto a baking sheet.
05 - Transfer baking sheet to the oven and bake for 10–12 minutes, until squares are golden and crisp.
06 - Meanwhile, combine 25 grams sugar and 1 teaspoon cinnamon in a small bowl. Melt 14 grams butter in a separate bowl.
07 - Brush the baked squares with melted butter while warm. Sprinkle evenly with the cinnamon-sugar mixture.
08 - Allow cereal to cool completely on a rack. Break apart any pieces that are stuck together. Serve or store in an airtight container up to one week.

# Notes:

01 - For extra crispness, leave the cereal to cool completely before storing.
