Preheat your oven to 400°F (200°C) and grease a large baking dish with olive oil.

In a large skillet over medium heat, add olive oil. Once hot, cook the diced onion and minced garlic until the onion is translucent, about 3-4 minutes.

Add the ground turkey to the skillet. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. If there’s excess fat, drain it off.

Stir in the diced sweet potatoes, zucchinis, smoked paprika, Italian seasoning, salt, and pepper. Cook for an additional 5-7 minutes until the vegetables start to soften.

Transfer the turkey and vegetable mixture to the prepared baking dish, spreading it evenly.

Sprinkle shredded cheese over the top.

Bake in the preheated oven for 25-30 minutes until the sweet potatoes are tender and the cheese is bubbly and golden.

Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving if desired.
