# Ingredients:

01 - 8 tablespoons (1 stick) unsalted butter, melted.
02 - 1 pound mochiko (sweet rice) flour.
03 - 2 cups granulated sugar.
04 - 2 teaspoons baking powder.
05 - 1/2 teaspoon kosher salt.
06 - 2 cups milk.
07 - 4 large eggs.
08 - 2 teaspoons vanilla extract.
09 - 1 can (13.5 oz) unsweetened coconut milk.
10 - 1/2 cup unsweetened shredded coconut.
11 - Flaky salt for topping (optional).
12 - Butter or oil for greasing pan.

# Instructions:

01 - Heat oven to 350°F. Grease 9x13-inch pan. Melt butter.
02 - Whisk together mochiko flour, sugar, baking powder, and salt in large bowl.
03 - Whisk milk, eggs, and vanilla in separate bowl.
04 - Mix wet ingredients into dry, then stir in melted butter and coconut milk until smooth.
05 - Pour into pan, tap to remove bubbles. Sprinkle with coconut and optional salt.
06 - Bake 60-70 minutes until set and golden. Cool completely before cutting.
