Gnocchi Bolognese Comfort Dish (Print Version)

01 - 1 tablespoon olive oil
02 - 1 medium onion, finely diced
03 - 1 medium carrot, finely diced
04 - 2 celery stalks, finely diced
05 - 2 large garlic cloves, finely chopped
06 - 500 g lean ground beef
07 - 100 ml dry red wine
08 - 2 tablespoons tomato paste
09 - 1 tablespoon fresh thyme, finely chopped
10 - 1 tablespoon fresh rosemary, finely chopped
11 - 1/4 teaspoon red chili flakes
12 - 2 cans (400 g each) crushed tomatoes
13 - 250 ml beef stock
14 - 2 bay leaves
15 - 900 g gnocchi
16 - 30 g grated Parmesan
17 - 6-8 fresh basil leaves, roughly chopped
18 - Salt and freshly ground black pepper to taste

# Instructions:

01 - Heat the olive oil in a large, deep pan or Dutch oven. Cook the onion, carrot, and celery for 8-10 minutes over medium heat until softened.
02 - Add the garlic and cook for another minute. Add the ground beef and cook for 5-6 minutes, breaking it down with a spoon, until browned.
03 - Stir in the wine and cook for 1-2 minutes until the alcohol evaporates.
04 - Add the tomato paste, thyme, rosemary, and chili flakes. Stir to combine.
05 - Add the crushed tomatoes, beef stock, and bay leaves. Bring to a boil, then reduce the heat and simmer uncovered for 15 minutes, stirring occasionally.
06 - Meanwhile, bring a large pot of water to a boil. Add salt and cook the gnocchi according to package directions.
07 - Once the sauce has thickened, stir in the cooked gnocchi, Parmesan, and fresh basil. Season with salt and black pepper to taste. Serve immediately, optionally topped with extra Parmesan.
